How To Make Aloo Gobi

Aloo Gobi or Alu Gobi is a traditional north Indian delicacy which is a dry dish made from Potatoes and Cauliflower and Indian spices. Aloo Gobi is a staple dish in Punjab and now is quite popular across the globe as well.

Ingredients:

1kg tomato cut into small cubes

11/2" piece ginger

2 garlic pods

25 gms freshly squeezed lemon juice

1tblsp non-fat yogurt

oil as per need

500 gms cauliflower florets

1 tsp cumin seed

12 potatoes cut into small cubes

50 gms vinegar

250 gms onion very finely sliced

100 gms cilantro leaves

salt and red chillies to taste

2 green onions

1/2 tsp tulsi leaves

1/2 tsp turmeric

Method

1. To begin with you must boil the potatoes (aloo) and cauliflowers (gobi) along with some salt, turmeric and 1 tsp oilTake off cauliflower florets as they will be done before the potatoes.The vegetables should be cooked but firm.

2. You need to grind the ginger and garlic to a fine paste.If fresh ginger is not available, use 1/2 tsp ginger powder.

3. Chop the coriander and the green onion finely

4. Mix sliced onion with basil, vinegar and olive oil.

5. Marinate 10-15 minutes.

6. In a small utensil on medium heat, mix in 1 tbs oil. When hot, mix in the cumin seeds.Fry until light brown.

7. Add the onions to this mixture and stir fry till the onions are golden brown

8. Add the ginger and garlic Saute for a few minutes.

9. Add the potatoes, cauliflower and the diced tomato.

10. If the vegetables stick to the pan, mix in a little yogurt to keep it moist.

11. Simmer (boil slowly at low temperature) until vegetables are done.

12. Add some sliced tomato and lemon juice and garnish with chopped coriander leaves
